Easy Crockpot White Chicken Chili Soup

A comforting and creamy white chicken chili that’s perfect for busy weeknights and family gatherings.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup heavy cream or sour cream (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a crockpot, combine the shredded chicken, white beans, corn, green chilies, onion, garlic, chicken broth, cumin, chili powder, salt, and pepper.
  2. Stir the mixture until well combined.
  3. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in heavy cream or sour cream if desired.
  5. Serve hot, garnished with fresh cilantro if you like.

Notes

Store leftovers in the fridge for 3-4 days or freeze for up to 3 months. Reheat to at least 165°F before serving.
