Tomato Rice

A comforting and flavorful dish that brings warmth and joy to any meal, perfect for busy nights or family gatherings.

Ingredients

  • 1 cup long-grain rice
  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1 cup tomato sauce
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 cup peas (optional)
  • Salt to taste
  • 1/4 cup cilantro, chopped

Instructions

  1. Heat the olive oil in a pan over medium heat. Add the diced onion and minced garlic, and sauté until they become fragrant and translucent.
  2. Incorporate the rice into the pan, cooking it until it turns a light golden brown.
  3. Pour in the chicken broth, followed by the tomato sauce, cumin, chili powder, and salt. Stir well to combine all ingredients.
  4. Cover the pan with a lid and let it simmer for about 18-20 minutes, or until the rice absorbs all the liquid and becomes tender.
  5. Once cooked, fluff the rice with a fork and mix in the optional peas and chopped cilantro.
