Green Chicken Enchiladas

A comforting dish that blends tender chicken, flavorful sauce, and melted cheese, creating a celebration of flavors.

Ingredients

  • 2 cups cooked chicken, shredded
  • 8 corn tortillas
  • 2 cups green enchilada sauce
  • 1 cup cheese (Monterey Jack and cheddar mix)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, 1 cup of cheese, cumin, and garlic powder until well blended.
  3. Warm the corn tortillas briefly in a pan or microwave to make them pliable.
  4. Spoon about 2 tablespoons of the chicken mixture onto each tortilla and roll it up tightly.
  5. Place the rolled enchiladas seam-side down in a greased baking dish.
  6. Pour the green enchilada sauce evenly over the top.
  7. Sprinkle the remaining cheese over the sauce.
  8. Cover with aluminum foil and bake for about 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
  10. Allow to cool slightly before serving.

Notes

Use rotisserie chicken for quicker prep time; sautéing tortillas can prevent cracking.
