Green Chilaquiles

A comforting dish of crispy corn tortillas drizzled with tangy tomatillo sauce, topped with fried eggs and cheese.

Ingredients

  • Corn tortillas
  • Tomatillos
  • Onion
  • Garlic
  • Jalapeño
  • Fried eggs
  • Cheese (crumbled queso fresco or your choice)
  • Crema
  • Salt
  • Oil for frying

Instructions

  1. Start by cutting corn tortillas into triangles. Heat oil in a pan and fry the triangles until they’re golden and crispy.
  2. While the tortillas fry, combine tomatillos, onion, garlic, and jalapeño in a blender. Blend until smooth to create your vibrant sauce.
  3. Once fried, remove the tortillas from oil and drain excess oil. In the same pan, pour in your tomatillo sauce and heat it up.
  4. Toss in the crispy tortillas, mixing until they’re evenly coated with the sauce.
  5. Serve them immediately topped with fried eggs, crumbled cheese, and a drizzle of crema.

Notes

For best results, do not overcrowd the pan when frying and serve immediately.
