Easy & Healthy Coconut Chicken Curry

A delightful one-pot coconut chicken curry that is perfect for weeknight dinners, packed with flavor and health benefits.

Ingredients

  • 1 pound chicken breast, cut into cubes
  • 1 can (400ml) coconut milk
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup peas
  • Fresh cilantro for garnish

Instructions

  1. Set your Instant Pot to sauté mode and add the olive oil. Once hot, sauté the onions, garlic, and ginger until fragrant and softened.
  2. Stir in the curry powder, turmeric, and salt. Allow the spices to cook for about 30 seconds.
  3. Add the chicken cubes, stirring well to coat them in the spices.
  4. Pour in the coconut milk and chicken broth, mixing everything to create a creamy sauce.
  5. Close the lid of the Instant Pot, set the valve to sealing, and cook on high pressure for 10 minutes.
  6. After cooking, do a natural release for 5 minutes, then perform a quick release for any remaining pressure.
  7. Stir in the peas and let sit for a few minutes. Serve hot, garnished with fresh cilantro alongside fluffy basmati rice.

Notes

For a vegetarian option, substitute chicken with tofu or add your favorite vegetables.
