Refried Beans

Creamy and flavorful refried beans, perfect as a side dish or dip, packed with nutrients.

Ingredients

  • 2 (15-ounce) cans Pinto beans
  • 1 small White onion, chopped
  • 4 cloves Garlic, minced
  • 1 Tomato, diced
  • 1 Jalapeno, chopped (optional for heat)
  • 1/2 cup Vegetable stock
  • 1 tbsp Lime juice, freshly-squeezed
  • 1 tsp Cumin, ground
  • 1 tsp Chili powder
  • 1/2 tsp Oregano, dried
  • Freshly cracked Black pepper, to taste
  • Fine Sea salt, to taste
  • 2 tbsp Butter or oil
  • Cilantro, fresh for garnish
  • Shredded Cheese for topping (optional)

Instructions

  1. Start by heating the butter or oil in a large skillet over medium heat.
  2. Once hot, add the chopped onion and cook until it turns translucent, about 2-3 minutes.
  3. Stir in the minced garlic, chopped jalapeno, cumin, chili powder, and oregano. Cook for another minute until fragrant.
  4. Add the drained and rinsed pinto beans along with the vegetable stock.
  5. Using a masher or the back of a spoon, mash the beans to your desired consistency. Cook for about 5-10 minutes, allowing the flavors to meld.
  6. Stir in the lime juice, salt, and black pepper to taste.
  7. Cook until everything is heated through and well combined.
  8. Serve hot, garnished with fresh cilantro and a sprinkle of cheese on top.

Notes

For a creamy texture when reheating, add a splash of vegetable stock.
