Creamy White Chicken Chili

A heartwarming and creamy white chicken chili made effortlessly in the Instant Pot, perfect for busy weeknights.

Ingredients

  • 1 lb chicken breasts
  • 1 can white beans (cannellini or great northern)
  • 8 oz cream cheese
  • 1 cup chicken broth
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Salsa verde, avocado, or shredded cheese for topping

Instructions

  1. Place the chicken breasts in your Instant Pot.
  2. Add the white beans, cream cheese, chicken broth, cumin, garlic powder, onion powder, salt, and pepper.
  3. Close the lid firmly and set the pressure cooker to high for 15 minutes.
  4. Once the cooking time is up, perform a quick release of the pressure.
  5. Carefully shred the chicken with two forks and stir everything together until well mixed.
  6. Serve the chili warm, topped with salsa verde, diced avocado, or shredded cheese.

Notes

For more flavor, sauté onions or garlic before adding other ingredients. For spiciness, add diced jalapeños or cayenne pepper.
