Easy Lasagna Soup

A comforting and easy to prepare soup that combines all the beloved flavors of classic lasagna into a cozy one-pot meal.

Ingredients

  • 1 pound ground beef or sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, brown the ground beef or sausage over medium heat, along with the chopped onion and minced garlic. Cook until completely done, then drain any excess fat.
  2. Add the tomato sauce, diced tomatoes, and broth to the pot. Break in the lasagna noodles, then sprinkle in the Italian seasoning, salt, and pepper. Stir everything together and bring to a boil.
  3. Once boiling, reduce the heat and let it simmer for about 15-20 minutes, or until the noodles are tender.
  4. Stir in the ricotta cheese until well mixed and creamy.
  5. Serve hot, topped with shredded mozzarella cheese and a sprinkle of fresh basil if desired.

Notes

This soup freezes beautifully, just pack it in freezer-safe containers.
