Easy Peach and Raspberry Cobbler

This Easy Peach and Raspberry Cobbler combines juicy peaches and tart raspberries beneath a golden crust, perfect for summer gatherings or a cozy dessert at home.

Ingredients

  • 1 Lemon, Zest of
  • 5 Peaches, wedges
  • 125 g Raspberries, fresh
  • 1 tsp Baking powder
  • 165 g Castor sugar
  • 140 g Plain flour
  • 2 tbsp Almonds, flaked
  • 90 g Butter, salted or unsalted
  • 2 tsp Milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the peaches and raspberries with the lemon zest and half the sugar. Once mixed, transfer this fruity mixture to a baking dish.
  3. Whisk together the flour, remaining sugar, baking powder, and flaked almonds in a separate bowl.
  4. Melt the butter and mix in the milk, then incorporate this wet mixture into the dry ingredients. Mix just until combined—don’t overwork the batter!
  5. Pour the batter over the fruit, spreading it out evenly.
  6. Bake for about 30-35 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
  7. Serve warm, ideally with a scoop of vanilla ice cream on top for a delicious contrast.

Notes

For extra flavor, toss the fruits with a dash of cinnamon or nutmeg before baking. Consider using a mix of seasonal fruits.
