Leftover Turkey Soup

A cozy and easy weeknight soup that transforms leftover turkey into a warm, comforting meal in about 30 minutes.

Ingredients

  • 2 cups leftover turkey, shredded
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth (low-sodium recommended)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • Salt and pepper, to taste
  • Optional: noodles or rice

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, sliced carrots, and sliced celery. Sauté until softened and the onion is translucent (about 6–8 minutes).
  3. Stir in the shredded turkey and chicken broth. Add thyme.
  4. Bring to a gentle boil, then reduce heat to simmer.
  5. Let the soup simmer for 20–30 minutes, allowing flavors to meld.
  6. Season with salt and pepper to taste.
  7. If using noodles or rice, either add them to the simmering soup or cook separately and stir them in just before serving.

Notes

For a creamier soup, stir in 1/2 cup of cream at the end. Add a bay leaf while simmering for enhanced flavor. If using leftover cooked turkey, the cooking time is reduced. Be sure to store any noodles separately if keeping leftovers.
