Easy Vegetable Soup

A comforting and nourishing vegetable soup packed with flavor and nutrients, perfect for chilly evenings.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 zucchini, chopped
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute.
  4. Add the zucchini and bell pepper to the pot, cooking for another 5 minutes.
  5. Pour in the vegetable broth and diced tomatoes, then season with oregano, thyme, salt, and pepper.
  6. Bring the mixture to a boil, then reduce the heat and simmer for 20-30 minutes.
  7. Serve hot, garnished with fresh parsley.

Notes

For optimal flavor, don’t rush the sautéing process. Customize with seasonal vegetables or add beans for protein.
