Fluffy Buttermilk Pancakes

Delight in a stack of fluffy buttermilk pancakes, perfect for breakfast or brunch, with a deliciously light, airy texture.

Ingredients

  • 2 large Eggs
  • 1 cup All-purpose flour
  • 1 tbsp Baking powder
  • 1/2 tsp Baking soda
  • 2 tbsp Granulated sugar
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract
  • 2 tbsp Unsalted Butter, melted
  • 1 cup Buttermilk

Instructions

  1. Whisk together the eggs and buttermilk until well combined.
  2. Combine the all-purpose flour, baking powder, baking soda, sugar, and salt in another bowl.
  3. Add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix—lumps are okay!
  4. Stir in the melted butter and vanilla extract gently.
  5. Heat a non-stick skillet or griddle over medium heat.
  6. Pour about 1/4 cup of batter for each pancake.
  7. Cook until bubbles form on top, about 2-3 minutes.
  8. Flip the pancakes and cook until golden brown on the other side, about another 2 minutes.
  9. Serve warm with your favorite toppings like fruits, nuts, or syrup.

Notes

For a lighter pancake, avoid overmixing the batter. You can substitute buttermilk with regular milk by adding vinegar.
