Fresh Vegan Veggie Wraps for a Quick Lunch

Quick and satisfying Fresh Vegan Veggie Wraps packed with wholesome ingredients, perfect for busy weekdays or a light weekend lunch.

Ingredients

  • 2 medium ripe Avocados, pitted and peeled
  • 1 medium Bell pepper
  • 400 g Chickpeas, canned
  • 1/2 tsp Garlic powder
  • 1 small Jalapeno
  • 1/2 medium Red onion
  • 2 tbsp Lime juice, freshly squeezed
  • 1/4 tsp Black pepper, freshly ground
  • 1/2 tsp Chili powder
  • 1/2 tsp Paprika, smoked
  • 1/2 tsp Salt
  • 1/2 tsp Cumin
  • 4 large Tortillas

Instructions

  1. Mash the ripe avocados with fresh lime juice, garlic powder, salt, black pepper, chili powder, paprika, and cumin until smooth and creamy.
  2. Finely chop the bell pepper, jalapeno, and red onion, adding a delightful crunch to your wraps.
  3. In a separate bowl, mix the chickpeas, chopped vegetables, and the creamy avocado mixture, ensuring all the ingredients are well-combined.
  4. Lay the large tortillas out on a clean surface. Evenly distribute the veggie mixture onto each tortilla, making sure not to overfill.
  5. Carefully roll the tortillas tightly, enclosing the filling to form neat wraps.
  6. Cut in half and serve immediately, or wrap them in foil for later enjoyment.

Notes

Feel free to substitute the veggies with whatever you have on hand! Spinach, cucumbers, or shredded carrots can all be great additions.
