Garlic Butter Steak Bites and Potatoes

A hearty and quick dish featuring tender steak bites coated in rich garlic butter, paired with crispy Yukon gold potatoes.

Ingredients

  • ¼ cup ghee or butter, divided
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon sea salt, plus more to taste
  • ¼ teaspoon ground black pepper, plus more to taste
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes

Instructions

  1. Heat a large cast iron skillet over medium heat and add olive oil and two tablespoons of ghee.
  2. Once the ghee melts, add the potatoes and sprinkle with garlic, thyme, oregano, salt, and pepper. Cook for 2-3 minutes before stirring.
  3. Continue cooking until golden brown and fork-tender, about 8-10 minutes, stirring frequently.
  4. Remove the potatoes from the skillet, leaving any browned bits behind.
  5. Increase heat to medium-high and add remaining ghee. Once melted, add steak cubes and season with salt and pepper. Sear for about 2 minutes before stirring.
  6. Cook until steak is golden brown, about 1-2 minutes. Return potatoes to the pan and stir to combine.
  7. Adjust seasoning as needed, then top with freshly chopped parsley. Serve hot.

Notes

For crispy potatoes, don’t overcrowd the pan. Let steak sit at room temperature for even cooking.
