Garlic Chickpea Soup

A delightful and hearty garlic chickpea soup that is quick to prepare and packed with flavor and nutrition.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup spinach (optional)
  • Lemon wedges for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Toss in the chickpeas, pour in the vegetable broth, and add the cumin. Bring everything to a boil.
  5. Once boiling, reduce the heat and let it simmer for 10-15 minutes to blend the flavors.
  6. Season generously with salt and pepper to your taste.
  7. If using spinach, stir it into the soup until just wilted.
  8. Serve hot with wedges of lemon on the side to brighten the flavors.

Notes

For a richer flavor, allow the soup to simmer longer. Consider using dried chickpeas for an authentic taste.
