Garlic Chickpea Soup

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrots, cooking until softened — about 5 minutes.
  2. Stir in the minced garlic and ground cumin, cooking for another minute until fragrant.
  3. Add the chickpeas and vegetable broth, bringing the mixture to a boil.
  4. Reduce the heat and let simmer for about 15 minutes, letting all those flavors meld.
  5. Use an immersion blender to puree the soup until smooth; if you prefer texture, leave it chunky.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.
