Gluten-Free Crock Pot Cheesy Potato Soup

A creamy, rich, and cheesy potato soup that’s perfect for cozy evenings.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup shredded cheddar cheese (gluten-free)
  • 1 cup milk (or a non-dairy alternative)
  • Salt and pepper to taste
  • Optional toppings: chives, sour cream, additional cheese

Instructions

  1. Place the diced potatoes, chopped onion, minced garlic, and vegetable broth into your crock pot.
  2. Set your crock pot to low and cook for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender and easily pierced with a fork.
  3. Once the potatoes are cooked, blend the soup until it reaches your desired consistency.
  4. Stir in the shredded cheddar cheese and milk, mixing well until the cheese melts fully.
  5. Season with salt and pepper to taste.
  6. Serve the soup hot, topped with chives, sour cream, or extra cheese if desired.
