Gluten-Free Crockpot Mediterranean Lentil Soup

A comforting and nutritious lentil soup made in a crockpot with Mediterranean flavors, perfect for any day of the week.

Ingredients

  • 1 cup dried lentils
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Fresh parsley for garnish

Instructions

  1. Rinse the lentils under cold water and add them to the crockpot.
  2. Add the diced tomatoes, chopped onion, diced carrots, celery, minced garlic, and the vegetable broth.
  3. Sprinkle in the dried oregano, basil, salt, and pepper.
  4. Stir everything together until well combined.
  5. Cover the crockpot and set it to cook on low for 6-8 hours or high for 3-4 hours, until the lentils are tender.
  6. Just before serving, stir in the lemon juice and garnish with fresh parsley.

Notes

For a creamier texture, blend part of the soup with an immersion blender before serving. Use pre-chopped vegetables to save time.
