Greek Chicken Bowls

A vibrant and customizable Greek Chicken Bowl featuring grilled chicken, fresh vegetables, and a refreshing Tzatziki sauce.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups cooked quinoa or rice
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, thinly sliced
  • 1 bell pepper, diced
  • 2 cups fresh spinach or lettuce
  • 1/2 cup feta cheese, crumbled
  • Salt and pepper to taste
  • Olive oil
  • 1 lemon, juiced
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh dill (or to taste)
  • Salt to taste

Instructions

  1. Preheat grill or stovetop pan over medium heat. Season chicken breasts with olive oil, lemon juice, salt, and pepper. Grill for 6-7 minutes per side until cooked through. Let rest and slice.
  2. For Tzatziki sauce, mix Greek yogurt, grated cucumber, minced garlic, olive oil, dill, and salt in a bowl. Refrigerate until serving.
  3. To assemble, layer quinoa or rice in bowls, top with greens, then add sliced chicken, cherry tomatoes, cucumber, red onion, bell pepper, and crumbled feta.
  4. Drizzle with extra olive oil and lemon juice. Serve with Tzatziki sauce on the side.

Notes

For extra juicy chicken, marinate for at least 30 minutes. Use leftovers creatively for quick meals.
