Greek Chicken Bowls

A delightful and vibrant bowl of Greek Chicken featuring marinated chicken, crunchy veggies, and creamy tzatziki.

Ingredients

  • 4 Chicken breasts
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • Juice of 1 Lemon
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 Cucumber, diced
  • 2 Tomatoes, diced
  • 1 Red onion, thinly sliced
  • 1/2 cup Feta cheese, crumbled
  • 2 cups Cooked quinoa or rice
  • 1/4 cup Fresh parsley, chopped
  • 1 cup Tzatziki sauce

Instructions

  1. In a bowl, marinate chicken breasts in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  2. Grill or sauté the marinated chicken over medium heat for about 6-8 minutes per side until cooked through, then slice.
  3. Prepare tzatziki sauce by combining yogurt, diced cucumber, minced garlic, lemon juice, dill, salt, and pepper in a bowl.
  4. Assemble bowls: Start with a layer of cooked quinoa or rice, add sliced chicken, sprinkle with cucumbers, tomatoes, red onion, and feta cheese, and finish with parsley and tzatziki sauce.

Notes

Marinate chicken overnight for enhanced flavor. Use Greek yogurt for thicker tzatziki sauce.
