Greek Chicken Bowls

A vibrant Mediterranean dish featuring marinated chicken, fresh vegetables, and tzatziki sauce, perfect for any occasion.

Ingredients

  • 2 Chicken Breasts
  • 2 tbsp Olive Oil
  • Juice of 1 Lemon
  • 2 cloves Garlic, minced
  • Salt and Pepper, to taste
  • 1 Cucumber, diced
  • 2 Tomatoes, diced
  • 1 Red Onion, sliced
  • 1/2 cup Feta Cheese, crumbled
  • Fresh Parsley, for garnish
  • For Tzatziki Sauce: 1 cup Greek Yogurt, 1/2 Cucumber, grated, 1 clove Garlic, minced, 1 tbsp Dill, Juice of 1/2 Lemon

Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, lemon juice, minced garlic, salt, and pepper. Add the chicken breast and coat it well in the marinade. Let it sit for at least 30 minutes.
  2. Cook the Chicken: Grill or bake the marinated chicken until fully cooked, about 6-7 minutes per side on the grill or until it reaches an internal temperature of 165°F in the oven.
  3. Prepare the Tzatziki Sauce: In a separate bowl, stir together Greek yogurt, grated cucumber, minced garlic, chopped dill, and a splash of lemon juice. Mix well and set aside.
  4. Assemble the Bowls: Once the chicken is cooked, slice it into strips. In serving bowls, layer the sliced chicken over fresh veggies like cucumber, tomatoes, and red onion. Crumble feta cheese on top and finish with a generous drizzle of tzatziki sauce.
  5. Garnish and Serve: Top your Greek Chicken Bowls with fresh parsley. Enjoy!

Notes
