Ground Beef Enchiladas

A hearty and satisfying dish featuring seasoned ground beef, gooey cheese, and rich enchilada sauce wrapped in warm tortillas.

Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Sour cream (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, brown the ground beef with the diced onions until they turn translucent, about 5-7 minutes.
  3. Add minced garlic, cumin, and chili powder to the skillet; sauté everything for another minute to release the flavors.
  4. Spoon the beef mixture generously onto each tortilla, roll them tightly, and place them seam-side down in a greased baking dish.
  5. Pour the enchilada sauce evenly over the rolled tortillas. Sprinkle the shredded cheese on top.
  6. Bake uncovered for 20-25 minutes until the cheese is bubbly and golden.

Notes

For a gluten-free option, swap in corn tortillas. Garnish with sour cream, cilantro, or jalapeños for extra flavor.
