Ground Beef and Potatoes Casserole

A comforting one-dish casserole featuring ground beef, tender potatoes, and a creamy cheddar sauce, perfect for family dinners or potlucks.

Ingredients

  • 1 pound ground beef
  • 4 medium russet potatoes, peeled and diced
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • 1 cup shredded cheddar cheese, divided
  • 1 cup sour cream
  • 1/2 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and dice the potatoes, chop the onion, and mince the garlic.
  3. Heat olive oil in a large skillet over medium heat. Sauté the onion and garlic until fragrant.
  4. Add the ground beef and season with salt, pepper, thyme, and paprika. Cook until browned.
  5. Pour in beef broth and simmer for a few minutes to meld flavors. Remove from heat.
  6. In a bowl, combine diced potatoes with the beef mixture and fold in sour cream and half of the cheddar cheese.
  7. Transfer to a baking dish, spread evenly, and sprinkle with remaining cheddar cheese.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for an additional 10 to 15 minutes until cheese is melted and bubbling.
  10. Let the casserole rest for 10 minutes before serving.

Notes

For crispy topping, broil for a few minutes after baking. Feel free to substitute ground turkey or Greek yogurt.
