Ground Chicken Fried Rice

A comforting meal featuring ground chicken, colorful vegetables, and fluffy rice, perfect for quick weeknight dinners.

Ingredients

  • 2 cups cooked rice (day-old or freshly made)
  • 1 pound ground chicken
  • 1 cup mixed vegetables (peas, carrots, bell peppers)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add ground chicken and cook until browned, stirring frequently.
  3. Push the chicken to one side of the skillet and crack in the eggs. Scramble them until fully cooked.
  4. Add mixed vegetables and cooked rice, stirring everything together to combine.
  5. Pour soy sauce over the mixture and stir well to coat all the ingredients.
  6. Add the chopped green onions, along with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes until everything is heated through. Serve and enjoy!

Notes

For added crunch, sprinkle toasted sesame seeds or chopped nuts on top right before serving. Store leftovers in an airtight container for 3-4 days.
