Ingredients

  • 4 chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 2 bell peppers (any color)
  • 2 tablespoons olive oil
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves fresh garlic (minced)
  • 1 inch fresh ginger (minced)
  • Salt and pepper to taste
  • Cooked rice (for serving, optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine olive oil, soy sauce, brown sugar, minced garlic, minced ginger, salt, and pepper.
  3. Add the chicken breasts to the bowl and coat them thoroughly in the marinade.
  4. Arrange the chicken, pineapple chunks, and sliced bell peppers in a single layer on a large sheet pan.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and the veggies are tender.
