Hawaiian Roll Cheeseburger Sliders

These Hawaiian Roll Cheeseburger Sliders are a delicious, easy-to-eat twist on classic cheeseburgers, perfect for any gathering.

Ingredients

  • 2 lbs 80/20 ground beef
  • 12-pack Hawaiian rolls
  • 11 slices Colby Jack cheese (or American cheese)
  • 1 large sweet onion, diced
  • 24 dill pickles
  • 6 tablespoons butter (divided: 4 tbsp for toasting, 1 tbsp for onions, 1 tbsp for brushing tops)
  • 1 teaspoon salt
  • 1 teaspoon cracked pepper
  • 1/2 cup mayonnaise
  • 1.5 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 2 teaspoons pickled juice (from the pickle jar)
  • 1/4 teaspoon cayenne pepper

Instructions

  1. Preheat your oven’s broiler. Slice the Hawaiian roll pack horizontally so you have a top and bottom slab. Arrange the cut sides up on a lined baking sheet.
  2. Melt 4 tablespoons of butter. Use a basting brush to coat the inside of all the rolls. Broil for 3–4 minutes until golden.
  3. Lower the oven temperature to 350°F. In a large bowl, combine the ground beef with salt and cracked pepper. Mix gently to combine.
  4. Press the seasoned beef evenly into a 9×13-inch casserole dish to form a uniform slab. Bake for 20 minutes.
  5. While the beef cooks, heat 1 tablespoon butter in a skillet over low heat. Add the diced sweet onion and sauté slowly until browned and sweet, about 15 minutes.
  6. Once the beef is cooked, remove from oven and drain well, discarding excess pan juices. Slice the slab if needed to fit the bun layout.
  7. Assemble the sliders on the baking sheet: place a layer of dill pickle slices on the bottom toasted buns. Carefully transfer the beef slab onto the bottom buns. Add a double layer of cheese across the beef. Spread the sautéed onions over the cheese, then set the top bun slab in place.
  8. Melt the remaining 1 tablespoon butter and brush it over the top buns. Return the assembled sliders to the oven and bake for 15 more minutes, or until the cheese has fully melted and the tops are golden.

Notes

Use 80/20 beef for flavor and juiciness. For a vegetarian option, substitute the beef with a seasoned plant-based crumble.
