Hawaiian Turn-Turn Chicken Stack

A delightful fusion dish featuring grilled chicken marinated in Hawaiian flavors, paired with fresh tropical produce, perfect for barbecues and family dinners.

Ingredients

  • 4 boneless, skinless chicken thighs
  • 1 ripe avocado
  • 1 bunch of fresh cilantro
  • 2 cloves of garlic, minced
  • 1 tsp fresh ginger, grated
  • ½ cup chopped green onions
  • 1 lime, cut into wedges
  • 1 cup fresh pineapple, chopped
  • 1 red bell pepper, sliced
  • 2 tbsp ketchup
  • ½ cup soy sauce
  • 2 cups cooked jasmine rice
  • ¼ cup brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp vegetable oil
  • ¼ cup pineapple juice

Instructions

  1. Combine soy sauce, pineapple juice, brown sugar, ginger, garlic, and ketchup to create a flavorful marinade.
  2. Marinate the chicken thighs in this mixture for a minimum of 1 hour, ideally overnight for deeper flavor.
  3. Preheat your grill to medium-high heat. Grill the marinated chicken thighs for about 6-8 minutes per side, or until cooked through and juices run clear.
  4. Prepare the jasmine rice according to package instructions while the chicken is grilling.
  5. Mix together the chopped cilantro, green onions, avocado, pineapple, and red bell pepper for a fresh topping.
  6. Allow the chicken to rest for a few minutes before slicing it to retain its juices.
  7. Serve the sliced chicken over a bed of jasmine rice, topped with the fresh mixture and lime wedges on the side.

Notes
