Healthy Beef and Pepper Rice Bowl

A vibrant and nutritious rice bowl featuring ground beef, bell peppers, and rice, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 cup bell peppers (variety of colors, sliced)
  • 1 cup cooked rice (white or brown)
  • 1 onion (sliced)
  • 2 cloves garlic (minced)
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground beef and cook until nicely browned, breaking it apart as it cooks.
  3. Toss in the minced garlic and sliced onion, sautéing until the onion turns translucent and fragrant.
  4. Stir in the bell peppers and cook until tender.
  5. Mix in the cooked rice and drizzle on the soy sauce, stirring to combine thoroughly.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with green onions if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Can be frozen for up to three months.
