Ingredients

  • 1 lb Chicken Breast
  • 2 medium Sweet Potatoes, cubed
  • 1 cup Rice (white or brown)
  • 2 tbsp Olive Oil
  • Salt, to taste
  • Pepper, to taste
  • Optional Seasonings (Paprika, garlic powder, or herbs)
  • Fresh Vegetables (Spinach, broccoli, or seasonal veggies)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the sweet potatoes into cubes. Toss with olive oil, salt, and pepper, then spread onto a baking sheet.
  3. Roast sweet potatoes for about 25-30 minutes, until tender and caramelized.
  4. While sweet potatoes roast, prepare the rice according to package instructions.
  5. Season the chicken breast with salt, pepper, and desired seasonings.
  6. Heat a skillet over medium heat and cook the chicken for 6-7 minutes per side, until cooked through (internal temperature should reach 165°F).
  7. Assemble your bowl: start with a bed of rice, add roasted sweet potatoes, top with sliced chicken, and finish with fresh vegetables.
