Healthy Potato Soup

A comforting bowl of homemade potato soup that’s quick to prepare and packed with flavor from roasted garlic and fresh herbs.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 head of garlic, roasted
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions or chives for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the roasted garlic and sauté for 1-2 minutes until fragrant.
  3. Toss in the diced potatoes, followed by the vegetable broth, and bring the mixture to a boil.
  4. Once boiling, reduce the heat and let it simmer until the potatoes are tender, which should take about 15 minutes.
  5. Grab an immersion blender and puree the soup until it’s smooth and creamy.
  6. Season with salt and pepper according to taste.
  7. Serve hot, garnished with chopped green onions or chives if desired.

Notes

For a dairy-free option, blend in some coconut milk. Experiment with spices like paprika or fresh herbs for added flavor.
