High Protein Crispy Garlic Chicken Fried Rice

A vibrant dish that combines crispy garlic, chicken, and vegetables in a satisfying fried rice, perfect for any occasion.

Ingredients

  • 1 lb Chicken breast, boneless skinless
  • 4 cloves Garlic, minced
  • 3 Green onions, chopped
  • 1 cup Peas and carrots, frozen
  • 2 large Eggs
  • 1 tbsp Oyster sauce
  • 3 tbsp Soy sauce, low-sodium
  • 2 cups Jasmine or basmati rice, cooked
  • 1/2 tsp Black pepper, ground
  • 1 tsp Cornstarch
  • 2 tbsp Olive oil or sesame oil
  • 1 tbsp Water

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add minced garlic and sauté until fragrant.
  2. Add the chicken breast and cook until browned and fully cooked through. Remove from the skillet and set aside.
  3. In the same skillet, toss in the frozen peas and carrots, stir-frying for a few minutes until tender.
  4. Push the vegetables to the side and crack the eggs directly into the pan, scrambling them until fully cooked.
  5. Return the cooked rice and chicken to the skillet, adding soy sauce, oyster sauce, black pepper, and cornstarch. Stir thoroughly to combine.
  6. If needed, add a tablespoon of water to help mix everything smoothly.
  7. Before serving, stir in the chopped green onions for a fresh touch. Adjust seasoning as necessary, then serve hot.

Notes

Use day-old rice for the best texture and avoid overcrowding the pan when cooking.
