High Protein Lasagna Soup

A comforting and hearty lasagna soup with lean ground turkey or chicken, creamy cheese, and fresh greens, perfect for chilly nights.

Ingredients

  • 1 lb ground turkey or chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup spinach or other greens
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the ground turkey or chicken with the chopped onions and minced garlic over medium heat until the meat is browned and the onions are tender.
  2. Stir in the crushed tomatoes, chicken broth, and Italian seasoning. Bring the mixture to a boil.
  3. Once boiling, add the broken lasagna noodles and cook for about 10 minutes, or until the noodles are tender.
  4. Next, stir in the cottage cheese and spinach, cooking until the spinach is wilted and everything is well incorporated.
  5. Serve hot, and top each bowl generously with shredded mozzarella cheese.

Notes

For a vegetarian option, substitute ground turkey with lentils or chickpeas. You can also mix different cheeses for enhanced flavor.
