High-Protein McGriddle Bites

Savory-sweet mini muffins packed with protein, perfect for busy mornings or meal prep.

Ingredients

  • 1 lb Breakfast sausage, cooked and cooled (crumbled)
  • 1/4 cup Maple syrup, sugar-free
  • 2 cups Protein pancake mix
  • 1 cup Cheddar cheese, shredded
  • 1 1/2 cups Water

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a standard muffin tin well with oil or nonstick spray, or line with silicone cups.
  2. In a large mixing bowl, add the cooked and cooled breakfast sausage, breaking it into small pieces as you add it.
  3. Pour in the sugar-free maple syrup, protein pancake mix, shredded cheddar, and water. Stir until evenly combined and the dry mix is fully hydrated. The batter should be scoopable; add a little more water if it feels too thick.
  4. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Press down lightly if a denser texture is desired.
  5. Bake for 20–25 minutes, or until the tops are lightly golden and a toothpick inserted into a center comes out mostly clean.
  6. Let cool in the tin for a few minutes, then transfer to a rack to cool slightly before serving. Enjoy warm or refrigerate for meal prep.

Notes

Use turkey or chicken sausage for a leaner option, or plant-based sausage for a vegetarian version. A small amount of regular maple syrup can replace sugar-free syrup if needed.
