Hobo Casserole with Ground Beef & Potatoes

A hearty and comforting one-pot meal featuring ground beef, tender potatoes, and gooey cheese, perfect for busy weeknight dinners.

Ingredients

  • 1 lb ground beef
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and ground beef, cooking until the beef is nicely browned.
  3. Toss in the diced potatoes and tomatoes, seasoning with salt and pepper.
  4. Transfer the mixture to a baking dish and top generously with shredded cheese.
  5. Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Notes

Feel free to swap ground beef with turkey or a plant-based alternative. You can also adjust the vegetables to your liking.
