Hobo Casserole

A comforting and hearty hobo casserole made with ground beef, potatoes, and cheese, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 4 medium potatoes, sliced
  • 1 can cream of mushroom soup
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef along with the chopped onion until the beef is fully cooked. Drain any excess fat afterwards.
  3. In a large baking dish, layer the sliced potatoes on the bottom.
  4. Add the cooked ground beef and onion mixture over the potatoes evenly.
  5. Pour the cream of mushroom soup over the beef layer.
  6. Sprinkle shredded cheese generously on top of the soup layer.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes.
  8. After 45 minutes, remove the foil and bake for an additional 15 minutes, until the cheese is bubbly and golden.
  9. Let it cool slightly before serving to ensure better slicing.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 2 months.
