Homemade Baked Chicken and Rice

A cozy one-pan meal blending tender chicken with fluffy rice, perfect for busy weeknight dinners.

Ingredients

  • 2 cups of rice
  • 4 cups of chicken broth
  • 1 pound of chicken thighs or breasts
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of mixed vegetables (like carrots and peas)
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large baking dish, combine rice, chicken broth, chopped onion, minced garlic, mixed vegetables, paprika, salt, and pepper. Stir to mix everything together.
  3. Place the chicken on top of the rice mixture and then drizzle with olive oil.
  4. Cover the dish tightly with aluminum foil and bake for 40-45 minutes.
  5. Carefully remove the foil and bake for an additional 10-15 minutes, until the chicken is fully cooked.
  6. Fluff the rice with a fork and serve warm.

Notes

For a twist, consider adding rosemary or thyme for flavor, or swap chicken broth for coconut milk for a tropical flair.
