Homemade Cinnamon Swirl Banana Bread

A delightful treat combining ripe bananas and warm cinnamon, perfect for brunch or as a comforting snack.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/3 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas until smooth. Add in the sugar, brown sugar, and melted butter, then mix well.
  3. Add the eggs and vanilla extract to the banana mixture and stir until combined.
  4. Whisk together the flour, baking soda, salt, and cinnamon in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Combine a tablespoon of sugar with a teaspoon of cinnamon in a small bowl for the swirl.
  7. Pour half of the batter into the loaf pan, sprinkle the cinnamon-sugar mixture evenly, then pour the rest of the batter on top.
  8. Swirl together gently with a knife.
  9. Bake in the preheated oven for 50-60 minutes or until a toothpick comes out clean.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack.

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
