Collard Green Rice

A comforting side dish that combines the earthiness of collard greens with fluffy rice, perfect for family dinners or festive gatherings.

Ingredients

  • 1 cup rice
  • 2 cups water or vegetable broth
  • 1 cup chopped collard greens
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional: chili flakes for heat

Instructions

  1. In a saucepan, heat olive oil over medium heat. Add the diced onion and sauté until soft.
  2. Toss in the minced garlic and cook for another minute until fragrant.
  3. Fold in the chopped collard greens and cook until they begin to wilt.
  4. Add the rice, water or vegetable broth, along with salt and pepper. Stir to combine.
  5. Bring the mixture to a boil, reduce heat to low, cover, and cook for 18-20 minutes until rice is tender and liquid is absorbed.
  6. Fluff the rice with a fork and serve.

Notes

Store leftovers in an airtight container in the fridge for 3-5 days, or freeze individual portions for up to three months.
