Homemade German Potato Soup

A comforting and creamy potato soup with earthy flavors, perfect for chilly evenings.

Ingredients

  • 4 medium potatoes, peeled and diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup dairy-free cream (or heavy cream for non-vegan version)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened (about 5 minutes).
  2. Add diced potatoes, cooking for a few more minutes.
  3. Pour in vegetable broth, bring to a boil, then reduce heat and let simmer until potatoes are tender (15-20 minutes).
  4. Blend the soup until smooth using an immersion blender or a regular blender in batches.
  5. Stir in dairy-free cream (or heavy cream), thyme, paprika, and season with salt and pepper. Cook for an additional 5 minutes.
  6. Serve hot, garnished with fresh parsley.

Notes

For a lighter version, omit the cream. This soup holds its flavor well and is great for meal prep.
