Gumbo Collard Greens

A nourishing and hearty fusion of Southern classics, combining collard greens with rich, savory flavors.

Ingredients

  • 1 bunch collard greens, chopped
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Optional: cooked sausage or ham

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, and bell pepper. Sauté until they soften, around 5 minutes.
  3. Stir in smoked paprika and cayenne pepper, cooking for another minute until fragrant.
  4. Introduce the collard greens, vegetable broth, and diced tomatoes. Bring everything to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 30-40 minutes, or until the greens are tender.
  6. If using, add cooked sausage or ham, and adjust seasoning with salt and pepper to taste before serving.

Notes

For best results, wash collard greens thoroughly to remove any grit. You can also experiment with the cooking time for a richer flavor.
