Honey BBQ Chicken Rice

A delightful dish that merges the sweetness of honey with smoky barbecue sauce, complemented by tender chicken and fluffy rice.

Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for about 3–4 minutes on each side until golden brown. Remove and set aside.
  3. In a mixing bowl, combine BBQ sauce, honey, soy sauce, and minced garlic.
  4. Toast the uncooked rice in the same skillet for 1–2 minutes.
  5. Add chicken broth and half of the prepared sauce; stir well.
  6. Return the seared chicken to the skillet and drizzle with the remaining sauce.
  7. Cover and simmer on low heat for about 15 minutes.
  8. Add mixed vegetables, cover again, and cook for 5 more minutes, or until the rice is tender and chicken is cooked through.
  9. Let rest for 5 minutes before garnishing with chopped green onions.

Notes

For deeper flavors, consider marinating the chicken in the sauce for a few hours, or even overnight. You can also customize veggies to your liking.
