Honey Garlic Sausage with Sweet Potatoes

Ingredients

  • 1 pound honey garlic sausage
  • 2 large sweet potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix the diced sweet potatoes with olive oil, garlic powder, salt, and black pepper. Toss until the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet.
  4. Cut the honey garlic sausages into bite-sized pieces and scatter them over the sweet potatoes on the baking sheet.
  5. Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized, and the sausages are browned.
  6. Remove from the oven, sprinkle with fresh parsley if desired, and serve warm.
