Instant Pot White Chicken Chili

A comforting, hearty dish made with tender chicken, creamy white beans, and a medley of spices, cooked quickly in an Instant Pot.

Ingredients

  • 2 chicken breasts, cooked and shredded
  • 1 can of white beans, rinsed and drained
  • 1 can of corn, drained
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 cups of chicken broth
  • 1 teaspoon of cumin
  • 1 teaspoon of chili powder
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  1. Set the Instant Pot to sauté mode and add diced onions and minced garlic. Cook until the onions are softened, about 2-3 minutes.
  2. Add in the shredded chicken, rinsed white beans, drained corn, chicken broth, cumin, chili powder, salt, and pepper. Stir to mix everything well.
  3. Secure the Instant Pot lid, making sure it’s locked, and switch the setting to high pressure. Cook for 10 minutes.
  4. After the cooking time is complete, allow a natural pressure release for 5 minutes. Then perform a quick release for any remaining pressure.
  5. Open the lid carefully and stir the chili. Serve hot, garnished with optional toppings like sour cream, shredded cheese, or fresh cilantro.

Notes

Consider using leftover rotisserie chicken for an even quicker meal. Adjust spices based on personal preference.
