Irish Vegetarian Stew

A heartwarming and comforting Irish stew featuring hearty vegetables simmered in a rich broth, perfect for family dinners or weekend meals.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 parsnips, diced
  • 2 potatoes, cubed
  • 2 cups vegetable broth
  • 1 cup green peas
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent.
  3. Stir in the diced carrots, parsnips, and potatoes; cook for about five minutes.
  4. Pour in the vegetable broth and add the green peas and diced tomatoes.
  5. Season with thyme, rosemary, salt, and pepper; stir well.
  6. Bring to a boil, then reduce to low heat and simmer for 25-30 minutes until vegetables are fork-tender.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.

Notes

For a thicker stew, mash a portion of the potatoes. Letting the stew sit before serving enhances flavors.
