Hearty Irish Vegetarian Stew

A comforting and versatile Irish vegetarian stew packed with wholesome vegetables and grains.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 parsnip, diced
  • 1 cup green beans, chopped
  • 4 cups vegetable broth
  • 1 cup barley or any whole grain
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until softened and fragrant.
  2. Add the diced carrots, potatoes, parsnip, and green beans, cooking for about 5-7 minutes until vibrant and slightly tender.
  3. Pour in the vegetable broth, followed by the barley, thyme, and rosemary. Bring everything to a boil.
  4. Once boiling, reduce heat to low and let it simmer for 30-40 minutes until grains are cooked and vegetables are tender.
  5. Season with salt and pepper to taste. Serve warm.

Notes

Feel free to substitute different root vegetables or grains as desired. Serve with fresh herbs or a dollop of sour cream for richness.
