Italian Pasta Salad

A vibrant and customizable salad filled with fresh ingredients, perfect for summer gatherings and easy weeknight dinners.

Ingredients

  • 8 ounces rotini or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 cup mozzarella balls or cubes
  • 1/2 cup olives, sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Cooked chicken or chickpeas (for extra protein, optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cooked pasta with cherry tomatoes, cucumber, red bell pepper, red onion, mozzarella, olives, and fresh basil.
  3. In a separate bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the salad mixture and toss to coat.
  5. If desired, add cooked chicken or chickpeas for extra protein.
  6. Serve immediately or refrigerate for later.

Notes

Add fresh basil leaves on top for garnish. Pairs well with grilled meats or crusty bread.
