Italian Penicillin Soup

A comforting bowl of Italian Penicillin Soup filled with wholesome ingredients, perfect for chilly nights or when you need a nourishing meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried thyme
  • 4 cups vegetable broth
  • 1 cup cooked brown rice or another grain (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic; sauté until the onion is translucent, about 3 minutes.
  3. Add diced carrots and celery, cooking for an additional 5-7 minutes until they start to soften.
  4. Stir in dried thyme and let it cook for about one more minute.
  5. Pour in the vegetable broth and bring to a gentle simmer.
  6. If adding cooked rice or grains, stir them in now and simmer for another 10-15 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.
