Italian Penicillin Soup

Ingredients

  • 4 cups chicken broth
  • 2 cups water
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cooked pasta (optional)
  • 1 cup chopped kale or spinach (optional)

Instructions

  1. In a large pot, combine the chicken broth and water, bringing it to a gentle boil.
  2. Add the diced carrots, celery, onion, and minced garlic to the pot.
  3. Season with thyme, oregano, salt, and pepper, then reduce heat and let simmer.
  4. Simmer for about 20-30 minutes until the vegetables are tender.
  5. If desired, add cooked pasta and chopped kale or spinach in the last few minutes of cooking.
  6. Taste and adjust seasoning before serving warm.

Notes

Serve with crusty bread or a salad. For a vegetarian option, use vegetable broth.
