Jalapeño Buffalo Chicken Casserole

A flavor-packed casserole that blends spicy jalapeños, tender chicken, and rich buffalo sauce beneath a layer of gooey melted cheese.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cauliflower rice
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup buffalo sauce
  • 1/2 cup Greek yogurt or dairy-free alternative
  • 1/2 cup chopped jalapeños (fresh or pickled)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cauliflower rice, buffalo sauce, Greek yogurt, jalapeños, garlic powder, onion powder, salt, and pepper. Mix everything together well until combined.
  3. Grease a baking dish with olive oil to prevent sticking and pour the mixture into the dish, spreading it out evenly.
  4. Sprinkle the shredded cheese generously over the top.
  5. Bake in the preheated oven for about 25-30 minutes, or until the cheese is melted and bubbly.
  6. Remove it from the oven and allow it to cool slightly before serving. Garnish with chopped green onions for a refreshing crunch!

Notes

For a crisper top, broil the casserole for the last couple of minutes. Using rotisserie chicken can save time while ensuring a juicy result.
