Keto Cheeseburger Soup

A hearty and satisfying cheeseburger soup that is perfect for a low-carb diet. Packed with ground beef, creamy cheese, and a hint of tang.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower florets
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, heat over medium heat and brown the ground beef until fully cooked. Drain any excess fat if necessary.
  2. Add the diced onion and minced garlic, sautéing until they soften and become aromatic.
  3. Pour in the beef broth, followed by the cauliflower florets and Worcestershire sauce. Bring to a boil before reducing the heat to let it all simmer. Allow it to cook for about 20 minutes, or until the cauliflower is tender.
  4. Stir in the heavy cream and shredded cheddar cheese, allowing them to melt and combine seamlessly.
  5. Season the soup with salt and pepper to taste, adjusting as desired.
  6. Ladle the soup into bowls, garnishing with chopped green onions for an extra pop of flavor and freshness.

Notes

For a lighter option, substitute ground turkey for the beef. Can also use vegetable broth for a vegetarian-friendly version.
